WHITE WINE

RIESLING
Flavour of lemon / lime High in acid, crisp, clean and well balanced. Definite fuitiness -pleasing grape flavour. Recommended dishes: Indian, salads, somple seafoods, veal, ort or as an apéritif.

   
     

CHARDONNAY
Dry, full-bodied and mouthfilling with a broad flavour. When developed takes on a nutty, bettery richness in taste. Recommended dishes: Full flavoured seafood, cream soupls, white meats, pasta, veal and salads.
   
     

CHENIN BLANC
Usually a 'drink now' style of wine. Dry to medium dry. Herbaceous, clean, fresh, high in acid. Some examples age well, developing 'honeyed characters'. Recommended dishes: Oysters, shellfish, grilled or poached fish, cream soups, simple seafoods, veal and pork.

SAUVIGNON BLANC
A crisp, dry wine with pronounced varietal flavour that clearly reflects the grape. medium bodied. High in acid. Recommended dishes: All seafood and fried foods, smoded salmon, oysters, chickens and salads.
   
     

SEMILLON
Creamy texture, 'grassy flavours', becoming nutty with cellaring. Can be made in a sweet style. Recommended dishes: Turkey, fish, pork, soups, lighter flavoured cheeses and seafood.
   
     

VERDELHO
Sleek texture, a very pleasing flavour ranging from apricot, pineapple, passionfruit to hazelnuts. Full-bodied. Recommended accompaniment for salads, simple seafood and pork or as an aperitif.

RED WINE

CABERNET SAUVIGNON
Medium to full-bodied style with a berry favour and lingering firm finishes. Firm tanning and acidity indicates good aging potential. mint and blackcurrant aromas, usually with new oak. Recommended dishes: Venison, buffalo, beef, lamb; also excellent with Swiss cuisine. Mature vintages for cheese.

MERLOT
Rich, fruity flavour. Soft, low in acid/tannin - often blended with Cabernet Sauvignon. Recommended dishes: Cheese and read meats. Strongly flavoured fish dishes.
   
     

Shiraz
A full flavoured wine with a spicy flavour and soft tannin finish. Shiraz wines are usually given wood maturation. Medium dry - usually softer and rounder than Cabernet. Earthy/spice aromas with the influence of oak. Recommended dishes" Beef, veal, game and matured cheeses.

Pinot Noir
Sappy, silky wine, but with intense flavour and velvet tannins. Clean and fresh lingering finish. Best when young, although some cool climate examples age particularly well. Recommended dishes: Duck, white meats, pasta, veal and lamb.
